On Sabbatical!
Currently, Zambrano Coffee is on sabbatical from roasting. My other
project, RoastLog, is
taking up all of my free time. The guys and I at RoastLog are getting
ready for our public debut at the SCAA Convention in April, and there's
a lot of work to get done before that. I have
no estimated date or time for the next roasting, but thank you for the
interest!

This Brazilian replaces the Brazil Chapada Diamantina which was on the menu previously. This one has a great chewy body to it, along with some very well balanced nutty flavors. There's still a nice edge to the flavor, so it's sure to give you that kick early in the morning. Want to make espresso? The Fazenda Aurea won't disappoint!
I never had coffee from Papua New Guinea before getting some
samples, one of which was this one, Maloolaba. They all had some spicy
tones to them, but the Maloolaba was the clear winner amongst all of
them.
The Maloolaba is bright, sweet and spicy, and has very small hints
of floral and Sumatra-like flavors. It's well-balanced and has a good
body to it.
Lerida Estate in Panama has been producing coffee since 1922. It's
located in the highlands of the Boquete region at 5,500 ft. in
altitude with deep, rich volcanic soil. I prefer this traditionally
processed bean to their dry-processed "Miel".
This one is bright and sits on the forward part of your palete but, at the same time, offers
complexities and richness. Although it's a light cup, it's got nice
body and there is a nice lingering finish to it.
This was the first bag of coffee that I ever purchased. After cupping
about a dozen samples, this one jumped out at me. I had a feeling that
this one would do well roasted a bit darker than I had roasted my
sample and I was right.
This is the darkest roasted coffee (between
Full
City+ and Vienna) on my menu and offers up deep earthy flavors with dark
chocolate underpinnings. It does pretty well as espresso, and due to
its deeper nature, can stand up well against milk in cappuccinos,
lattes, creamer, etc.
